        The object of my affection?  Tall…Dark…and…well, I wouldn’t say handsome but sure is Yummy!

        Chocolate Mug Cake! Takes little time to make and cooked in the microwave. It’s winter here so this is going down rather nicely. You Northerners mightn’t be as keen this time of year but if you’re a true chocoholic, you’d be saying “who cares about the weather, give me the chocolate!”

        5 minute chocolate mug cake  from notquitenigella.com 

        Makes 2

        • 4 tablespoons flour
        • 5 tablespoons sugar
        • 2 tablespoons cocoa
        • 1 teaspoon baking powder (could prob used 1/4 teasp of baking soda for each mug if wanted)
        • 1/2 teaspoon coffee powder (optional)
        • pinch of salt
        • 1 egg (lightly beaten)
        • 3 tablespoons milk
        • 3 tablespoons oil
        • 3 tablespoons chocolate chips or flakes plus 2 tablespoon extra
        • A small splash of vanilla extract
        • 2 microwave safe coffee mugs

        Put all dry ingredients in a mug and mix well.

        Pour in the milk, oil, chocolate chips or flakes and vanilla extract and mix well. Then divide the beaten egg between each mug and mix well. Add the extra tablespoonful of chocolate chips or flakes on top of the batter. Cover lightly with cling film.

        Do one mug microwave at a time. Cook for 1 minute on medium heat. Then microwave for another 30 seconds on medium heat. Check on the consistency-it should be cooked but still moist and gooey. If it is still not cooked, microwave on another 30 seconds on medium heat. It will cook further on standing.

        Serve with cream or icecream or whatever you like really!

        I’ve tried similar things before and they’ve been dry or rubbery but  this recipe  works quite well for a microwave cake. Use a big, tall mug just in case.  I didn’t bother with the coffee powder.  I also haven’t added the chocolate that the recipe calls for  because I haven’t had any on hand.    So if anyone does try this, I’d love to know how it goes. I’m imagining it’s more gooey chocolate goodness.

            they have frosting that you can just spray from an aerosol can now. cant get any more direct delivery than that

              Thanks, Jersey – I’m a, well, a mug, for a good chocolate recipe! lol I’ve always got my mug directed at the chocolate goodies in the bakery at the grocery store…well, you get the idea! i’ll try this for sure. Bon appetite, everyone!

                  I shall look into this!  Some commercial frostings aren’t that great tasting though. I wonder how the aerosol ones compare? I suppose one can;’t be too fussy when one needs a chocolate fix.

                  One tip to add with the recipe: remember to divide the ingredients between mugs! Can’t tell you how many times I’ve put 3Tb of milk in one mug instead on 1& 1/2.

                    Thank you for posting this!  I made these last night and it was incredible!  I was even able to make them gluten free, egg free and lactose free.  It can be very hard for us to find recipes that work well that accomidate all the allergens in this house. 

                    I added Ghirardelli semi-sweet chocolate chips to the recipe and it was SOOO good.  I could only imagine how good it would be to use the 60% cocoa chips instead……..

                      Good to know Amy! It’s funny because last time I made it (like days ago :p) I actually wondered what you’d use if had no eggs. I’d heard vinegar can be used in place of egg but that just seems…..Wrong! Do you use an egg replacer product in recipes?

                        Yum! Thanks for posting. Ricky had found a similar recipe online but it didn’t turn out very good. I didn’t even taste it because it looked gross.

                        I hate baking because I hate doing dishes so this is awesome (cuz I LOVE anything chocolatey!). I need to go buy some cocoa.

                          I use a powder egg replacer that is made by Ener-G. You can also use 3 tbsp of applesauce and add a little extra baking powder. I do that a lot too.
