The object of my affection? Tall…Dark…and…well, I wouldn’t say handsome but sure is Yummy!
Chocolate Mug Cake! Takes little time to make and cooked in the microwave. It’s winter here so this is going down rather nicely. You Northerners mightn’t be as keen this time of year but if you’re a true chocoholic, you’d be saying “who cares about the weather, give me the chocolate!”

Makes 2
- 4 tablespoons flour
- 5 tablespoons sugar
- 2 tablespoons cocoa
- 1 teaspoon baking powder (could prob used 1/4 teasp of baking soda for each mug if wanted)
- 1/2 teaspoon coffee powder (optional)
- pinch of salt
- 1 egg (lightly beaten)
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips or flakes plus 2 tablespoon extra
- A small splash of vanilla extract
- 2 microwave safe coffee mugs
Put all dry ingredients in a mug and mix well.
Pour in the milk, oil, chocolate chips or flakes and vanilla extract and mix well. Then divide the beaten egg between each mug and mix well. Add the extra tablespoonful of chocolate chips or flakes on top of the batter. Cover lightly with cling film.
Do one mug microwave at a time. Cook for 1 minute on medium heat. Then microwave for another 30 seconds on medium heat. Check on the consistency-it should be cooked but still moist and gooey. If it is still not cooked, microwave on another 30 seconds on medium heat. It will cook further on standing.
Serve with cream or icecream or whatever you like really!
I’ve tried similar things before and they’ve been dry or rubbery but this recipe works quite well for a microwave cake. Use a big, tall mug just in case. I didn’t bother with the coffee powder. I also haven’t added the chocolate that the recipe calls for
because I haven’t had any on hand.
So if anyone does try this, I’d love to know how it goes. I’m imagining it’s more gooey chocolate goodness.
