I know there’s an obvious diference between the long haired buns and the short haired buns.. but I see pics of super-sleek, SUPER short haired buns on here, and Zeus’s hair is definitely nowhere near that short!  He’s quite fuzzy, but not like the long-haired buns.

Is it a breed thing?  Are there different classifications for the lengths of hair buns have?

From what I remember, there are four basic coat types. They’re not so much about length as they are about feel and thickness.

Rex – super short, all fur is one length which makes it feel and look like velvet
flyback – when you run your hand from tail to head, the fur stands up and then snaps back into place quickly
rollback – when you run your hand from tail to head, the thick fur stands up and very slowly rolls back into place (the basic lop breeds have rollback fur)
wool – Angoras and similar buns have wooly fur

Interesting!  Zeus definitely would classify as “rollback”.

I think the ‘super sleek’ haired buns you are seeing are the rexes. They are bred specifically to have that type of hair, it’s like velvet!

Here’s a good list of some basic breeds organized by fur type:
