It could be just temporary. I was thinking maybe he was 4-6 months or so and not neutered, then it could be about starting puberty. If he’s 2 years old, he’s well past puberty, of course.
Rabbits do like to dig and bite and shred fabric, and they can also like to throw things, like food and water bowls. It’s normal for them, maybe he was just excited about his new bed? It’s to be expeceted that a bun makes a mess of a nicely made bed, because rabbits like to arrange things for themselves, and to them, that’s not destructive, it’s improvement.
I’ve had IKEA beds for my buns for a long time, but I havent used the little blanket and comforter that comes with it. I’ve lined mine with pieces of vet beds cut to size. Many rabbits like to chew on their IKEA-beds, and that’s ok since they don’t eat big chunks of it at any one time.
For the water-bowl, you could perhaps get a heavier water bowl. I have fairly heavy stone ware bowls for my bun, because she’s definitely throw a lighter bowl around.
800 dollars for a boy neuter is a crazy amount of money. If you want to neuter your bun, maybe you could find a vet that does work for rescues and shelters? A male neuter is a simple affair and shelter vets tend to have done tons of neuters, so they have the right equipment and know exactly what they’re doing.
