So we got a baby gate for xmas, but have found that Pillows can squeeze right through. We’re going to weave cloth bewteen the bars, but I was wondering what kind would be best? Fleece is nice, but she chews through it waaaaay too easily!

Could you attach grid cube panels to the gate instead, using zip ties just as you would if you were using them to build a pen? Those would be permanent and a lot more secure than cloth, which besides being chewed on, could be pushed to the side and still let your bunny through, or let part of her body through, which could be dangerous if she got stuck. If you use the panels, but sure to get the grids with the 1″ openings.
