Oxbow Critical Care is a powder that you mix with water yourself. Once mixed it should be refrigerated unless you serve it “to order”. Mixed refrigerated CC should be used within a day. I find it best to stir in some hot water before serving refrigerated mixed, so it’s not so cold.

Oxbow themselves recommend you store the dry powder CC in the fridge. This will extend the shelf life considerably beyond the expiration date. This is great – we bun owners never want to run out of CC. Emergencies tend to occur at inconvenient times such as Christmas Eve or in the middle of the night.

As long as the powder is stored dry and not too hot and looks and smell good, the worst thing that could have happened to it is that it might have lost some of its nutritional content. This is not important for short term emergency use.

Oxbow actually mentions you can freeze CC to extend shelf-life, but too many freeze-thaw cycles can break down the nutrients too much.

I store mine (unmixed) in the freezer.
