She sounds like a handful!

I wonder if she could be bored at night, which causes her to go on these sprees! Have you considered a second bunny? (this is a huge undertaking in itself, but could be worth considering!)

Apologies if these seem like obvious solutions that you’ve already tried, but I didn’t see mention of them:
Does she have hay to eat? Can you try putting a litter tray and a box of hay on the sofa for example, perhaps with some fun herbs or dried flowers. This might distract her from destroying the couch if she sees something delicious to eat instead.
Do you know how shes escaping? Often draping a blanket or sheet over an xpen will deter buns from escaping, because just the perception of a roof will stop them trying to jump.
Have you tried wooden toys and willow or apple twigs?
You can also try blocking off the things you don’t want her to get to, rather than blocking her in.

Could you put her in her pen and watch to find out how she escapes? Generally escapees jump onto a shelf which can be blocked rather than free jump from the floor over the fence to the floor on the other side.
