What do I do? Keep an eye to see if he poops? Will the graphite be harmful?

Your bunny will likely be fine. Did he eat the whole pencil or just chew on it a little bit? Graphite is non toxic, and the rest of the pencil is wooden so shouldn’t cause any harm at all. Of course if you notice bunny acting unwell or not eating/pooping etc then a vet visit is recommended to rule out any issues.
