  Next week I am going out of time from the 21st- the 19th i have someone coming there to take care of the buns while I am away. Is there anyway I can pre-make all the salads and keep the lettuce fresh?

  A slightly damp papertowl around the washed and dried greens. That’s what we did with herbs at the restaurant to keep them fresh. I wouldn’t put in plastic.
