My husband and I started doing some “vegetarian days” and we’re in desperate need of some variety. I know there are quite a few vegetarians on these boards so I’m wondering what your favorite recipes are or good vegetarian food blogs?) . We don’t have any food allergies.
In current dinner rotation:
Sweet Potato Burritos (variations)
Vegetarian Stew (Ingredients are really just random veggies we have around the house in vegetable broth)
Brown rice bowls with various beans, pico de gallo, and avocado with a homemade “Yumm Sauce”
This is our basic menu list:
-Homemade pizza
-Pressed tofu, breaded and pan fried with dipping sauce. With pilaf and veggies.
-BBQ tempeh cubes and hash potatoes
-cashews, califlower, peas, onions in a coconut/ peanut sauce over rice.
-tofu pot pie
– baked samosas (potatoes, peas, Indian spice) with sweet and sour sauce
-lettuce wraps (‘chicken’ salad rolled into romain)

A quick and easy meal I like to make is Sphaghetti topped with Falafel instead of meatballs. I buy the dried falafel powder and fry them.

My husband is still a little weird about tofu but he’s coming around. If I don’t tell him it’s in something he doesn’t seem to notice it.
I was raised by a vegetarian that wasn’t big on cooking. So while cutting out the meat doesn’t phase me I don’t have any good recipes up my sleeve. I’m going to try the Tofu Kung Pao because he loves Kung Pao and it’s a sneaky way to get him to admit it’s the idea of tofu not the actual tofu that he doesn’t like. XD

The thing with tofu is that it needs to be pressed. I have made panko crusted tofu before and it was magical!

How about enchiladas? I have a vegan recipe for one that is extremely nutrient packed that you will be full from 1-2! You can always use cheese over the vegan type and it works fine.

I tested that recipe out on my dad and boyfriend. My dad asked if I could make another batch so he could enjoy it with his girlfriend. The pasta sauce is very creamy yet does not leave a gross feeling after. It also contains B12, protein (the nutritional yeast flakes provide those things), iron, etc. I highly recommend this recipe. It tastes like alfredo sauce ![]()

You’ll have to try different recipes to find the one you like best. I wish my local chinese place would give me theirs, best ones I have tasted. >:s
Two things I do at home are lentil burgers – boil lentils for about 20m, in a separate pan cook veggies until they are soft with herbs/spices to your liking (I use fresh minced garlic and black pepper), drain the lentils and add them and veggies to a mixing bowl. Mash until it’s all mixed together into a spread like texture. Put onto poppy onion hamburger buns and serve with cheddar cheese.
And mashed potatoes with home made vegetarian gravy. Vegetable stocks you buy in the store are always gross, so I make my own. What I do is take yellow onions and portabella mushrooms and chop them up. Add 1 teaspoon olive oil to a large pan. Heat until it’s very very hot and then add the mushrooms/onions and a pinch of salt. Cover and let the onions caramelize (do not stir!) Once they are nice and brown add a little water and then add flour and mix briskly until it’s the right thickness for you. You can either leave the veggies in, or take them out and let the water strain into a different pan before adding the flour. You can serve this with whatever you want to – a soy fake meat, tofu, mixed vegetables, etc.
Roasted asparagus (asparagus with olive oil massaged into it, a tiny bit of salt, bake for 10-20m depending on how well done you like it on 425F) with steamed vegetables and a little bit of lipton rice sides is another easy to make meal I use.

Oh, another thing is egg drop soup – you can buy the mixes in the store and just add egg to it.

Stickerbunny – Thank you! I bet I can convince our favorite Chinese food place to give us their spring roll recipe! They’ve helped us out with other Chinese food dishes we’ve made in the past (the older lady that owns the place adores my husband). I’m going to use your veggie stock recipe (have to agree about the store bought stuff).

If you want a large amount of veggie stock add that base to a pot and add in whatever veggies you use for your veggie stew and let it all boil on low/med for a few hours with garlic and your choice of herbs. Soup and leftover stock.
The onions alone only make a few servings.
How about portobello sandwiches? That would be easy to make and yummy too. Also along of line of Chacha’s quesadilla’s you can do those with portobella mushrooms – that is of course if you like mushrooms. I love the idea of doing different types of quesadilla’s – those are always easy to do.
You could also do some baked potato with some veggie toppings that would be easy and tasty. Kind of like Sticker’s mashed potatoes but with baked potatoes.
I love to make curries. I buy Japanese curry mix, Thai curry paste (plus coconut milk), and whatever else I can find at the store. Make some veggies, add the sauce ingredients and simmer for a couple minutes, and serve over rice or with noodles. Last night I made a Thai green curry with cauliflower, potatoes, spinach, and peas.

I make “fajitas” a lot (more like burritos). Onion, bell pepper, jalepeno, and black beans sauteed with spices (cumin, chile powder, salt, pepper), then serve on tortillas with sour cream, cheese, and hot sauce (DH adds rice to his too).
SmittenKitchen.com isn’t vegetarian, but she does have a lot of vegetarian recipes. Many are a little more “special” than a typical weeknight dinner, but they are great for parties or if you want to spend a lazy Sunday doing some cooking. I love these:

Jerseygirl, it’s sort of like a pie crust, but more flakey. So like pie crust meets croissant? Not at all healthy, but definitely one of the best crusts I’ve made in general.
