I need to start eating better and lose some weight.  I am now back to work and getting a paycheck, so I can now buy my own food!  YAY!  But I don’t cook a whole lot.  At all.  So I’m not very skilled.   Does anyone know of any healthy or organic cookbooks that have easy recipes?

This is a really good, BIG, cookbook.
          http://www.amazon.com/How-Cook-Everything-Vegetarian-Meatless/dp/0764524836/ref=sr_1_1?ie=UTF8&qid=1307312998&sr=8-1
They also have just a plain “How to Cook Everything” that includes meals with meat. I like the vegetarian one because I think it’s a bit healthier, ie. you’re not getting 300 recipes for bacon cheeseburgers. You can add the meat back in as well… they have good stir frys and it wouldn’t be hard to throw some chicken or beef in there!

Tate, I LOVE Mark Bittman’s cookbooks and have both of those as well.

I also like the Cooks Illustrated website. You can watch their videos for really good ideas and I have their Slow Cooker Revolution and everything I’ve made so far is so good.

Also check out The Pioneer Woman website blog and her Tasty Kitchen blog for some great recipes – I’ve made alot from her and from the Tasty Kitchen.

Michelle, check out cooking blogs too – lots of great ideas and even better – the recipes are FREE!!! But do check out Mark Bittman’s books too – great recipes.

I have found alot of tasty recipes on Allrecipes.com. Some good light ones like angel hair pasta with chicken and herbs, a nice stir fry, roasted chicken…

I’m not much of a cook either, but even I can get some of them right

I use Better Home & Garden’s Biggest Book of Diabetic Recipes. We originally got this book because my mom’s fiance is diabetic but I’ve completely fallen in love with it and plan to buy my own copy when I move out. It’s great because it gives you the full nutrition facts for each recipe so it makes it very easy to keep track of your serving sizes, calories, carbs, sodium, etc. They have a great variety of recipes so I think there’s a good variety of recipes that are easier than others. All of the recipes that I’ve tried so far have been delicious and they even have a great “Cooking for Two” section so you don’t have to end up with a whole bunch of leftovers.

Calorie Count and All Recipes are also great online resources!

Pioneer woman = not healthy usually. But her stuff was yummy, before I went vegan.

Honestly, a lot of my food comes from peta2’s College Cookbook. The others is just stuff I randomly try to cook.

I just use the internet to find a lot of my stuff, then modify it to my tastes. My best advise is learn how to read labels and understand what they mean. I have not bought a loaf of white bread in nearly a decade after reading those labels.
