It sounds like when the kitty was there she started territorial marking, and then just continued the habit. If I were you, I would pretend that she is a brand new bunny to your house and needs to be litter trained all over again. If she started peeing in corners of the living room, she might just consider that one of her “pee spots” now, and use it out of habit, especially since it smells like her pee and poops over there, she may just consider it another litter box area, she doesn’t really know that carpet isn’t supposed to be a litter box
. Can you put liltter boxes in the corner of the dining room where she is peeing/pooping and see if she is just using those corners out of habit?
For a brand new bunny just learning litterbox training, you would slowly increase the amount of space she is allowed to run around in, and only let her run around when she is supervised. Then as soon as she makes a move to pee or poop on the floor, you stop her and direct her back to her litterbox. There is more litter training tips if you go to the “Bunny Info” section, and then “litterbox training” that might help you.
