        Does anyone here have some good, quick recipes for using Squash, Eggplant, Green Beans, Green Peppers & Cucumbers ?  They don’t have to be mixed into one dish, just some side dish, or even main dish, recipes that you’ve come to love and make a lot ?

        I don’t have time to do a google search or look through cook books right now and figured some of you probably have gardens and are starting to reap the benefits of your hard work about now……you’ll be fixing some of these for picnics, dinner, supper, whatever and the recipe will be fresh in your mind…….so maybe you could share ?  pretty please ?

        I’ve already made creamed cucumbers, so would like to try something different.  Using them in salads is gettin’ old.  I was thinking of trying them on a sandwich, as I love “crunchy” stuff.  I love Green Peppers on sandwiches !  But I don’t think there’s too many things you can make with cucumbers, is there ? 

        My sister just made some stuffed Green Peppers and gave us some but I’ve never been a big fan of ’em because of all that rice.  I don’t care for rice cooked into things for some reason *shrugs*  I love it (rice) by itself, though !  Needless to say my husband ended up eating most of it

        I have a crock pot that I haven’t used in a while  so that’s an option

        Anyway, I’d appreciate some culinary help here since that’s not my field of expertice, LMAO !

          If I had my recipes with me at work, I’d totally share an awesome eggplant parmesan recipe and my fav squash soup recipe… however they’re all at home!  I’ll try to think to grab it when I come to work tomorrow.  I’m a food expert.  ha

            this is a nice one, just mess around with it to find what u like this is for green beans although u could add peppers
            Ingredients:
            8 ounces sliced fresh mushrooms
            1/2 cup finely chopped onion
            1/4 cup butter
            1 1/2 pounds fresh cut green beans or 16 to 20 ounces frozen green beans
            1 cup water
            salt and pepper
            1/2 cup heavy cream
            Preparation:
            Sauté mushrooms and onions in hot butter. Add green beans, water, and salt and pepper. Bring to a boil; reduce heat and cover. Simmer until tender. Add cream and heat through without boiling. Taste and add more salt and pepper as needed.

                Mmmmm, this sounds deeee-lish-us !!  I can just feel my backside getting bigger with that heavy cream, though

                  Squashes and eggplants are great grilled.  I make them alot.  I put a minced clove of garlic and a chopped up sprig of oregano and basil into a quarted cup of olive oil.  Halve the squashes, and cut the eggplnts into slices about 1/4 of an inch thick.  Paint both sides of the veggies with the oil mixture, then put on a hot grill.  I love them made this way.

                  I discovered a super quick and easy way to make green beans when we got some from our garden.  Just stir fry a minced clove of garlic in some oil, then add the beans and toss to stir fry.  Cooks really fast, and they come out crispy and bright green.  Peppers can be prepared this way too.
