I had to take out the water bottle I bought my rabbit because he was sitting under it, and was getting wet. We put in a bowl of water, and it works alright, but  I  usually  come  up  to  find  hay  or  poop  or  the bowl shoved in the little log I bought him, with of course no water in it. The bottom of the cage usually isn’t wet, so I don’t what he  does with the water. I bought him a no drip water bottle, but I don’t think he’s drinking from it, so I’ve left the water bowl in there. Any suggestions? I’m just worried that’s no too sanitary for the bunny to have a water bowl like that.

He should not be getting wet. My bottle just drips a tiny bit but I put a paper towel under it to absorb the drops.  Your bun is a chewer so I would put a small crock under the drip to catch the water.  The rescue does this for some of the bottles.  Maybe try a better quality bottle? Is it hung too high?  I think the tip is supposed to be at shoulder level. It should not drip enough to cause a puddle! I personally don’t like crocks just because stuff ends up in there and I agree it’s not sanitary.

my bun used to perch on any bowl in her enclosure & wee & poop in it

i have since switched to bowls that can be hung & clipped to the side of the enclosure which solves the problem.  plus bun can’t shove the crock around & knock water out of it.  you can find lots of crocks at the pet store that have clips… the stainless steel ones i have in pinky’s cage were from the bird section.

I too was also going to suggest water bowl that attaches to the side of the cage.

That is what I have as well, those crocks work very well. All bunnies seem to like to throw bowls (or anything else that isn’t placed how they like it!) and thats probably how it ends up in the log! I think you’ll find that the crocks that attach to the side will work very well for you.
