Crabapples are a type of apples. Don’t take off the leaves. They love the leaves.

Is there anyway to trim branches and keep for the winter? Id have to take the leaves off of course but if I store them in a sealed bag, they should stay pretty green?

Dried is fine, with or without leaves. You can take off the leaves and dry them separately, store the completely dry leaves in a zip-lock bag and use them as a snack or hay-topper in winter. Your buns will love them.

The twigs can just dry and be kept standing in a vase without water in it. It’s best not to pack them into plastic because you should only ever store really, really dry food into tighly sealed plastic. If there’s moisture left, mold and other nasties can start growing.
