I have a feeling the wood will absorb the smell of bunny pee and get chewed to pieces honestly

I’m not sure what mesh storage wood or wire wood is. You need to make sure that whatever wire/fencing is used is thick enough. Something like chicken wire is too thin. It could be chewed on and actually broken and eaten. Hardware cloth fencing is thicker and stronger and couldn’t be broken by rabbit teeth. As eva said, any wood could be chewed on and could absorb pee. Even if your bunny is good about using her litter box, pee droplets sometime get splashed around when a rabbit jumps out of the box quickly. Any wood used would have to be untreated wood.
