         I’m thinking of dehydrating about 1/4 of the fruits I’m thinking of growing when we move.  And freezing 1/4 as a frozen treat for a bunny (or me, I love frozen fruit).  How long will the dehydrated fruit last? I’m thinking of things like apples (those will be just dehydrated), strawberries, etc.

          No idea, but you can research it on line. I would try finding companies (like small, organic ones) that make them and see if they say. Or, check out your store locally and read the expiration date. It may give you an idea of how long an organic fruit, with no preservatives, will last. Possibly search online for dehydrated fruit recipes, where they may know how long they would be good to use.
